Hearty but healthy: Steak minus the chips


Ever since starting on Slimming World, I’ve been more mindful of what I eat. I don’t cut things out but I do weigh up the pros and cons of eating things more. For example, I would rather have a hearty but healthy lunch and main meal and save myself some calories to treat myself to chocolate if I want it (although, I rarely do these days).

This is one of my absolute favourite meals – it still feels like a treat, but is reasonably healthy and I think it may even by free on Slimming World extra easy.

It’s simply steak steamed asparagus, poached egg, and grilled flat mushrooms and tomatoes and a smattering of greek 0% fat yoghurt mixed with English mustard. It takes a mere 10 minutes to prepare – grill the mushrooms and tomatoes (approx 5 to 10 mins – use spry oil and seasoning) at the same time cook the steak on a very hot pan for max 3 mins on each side, rest steak on a copping, poach egg in hot water for approx 2 to 3 mins, cook asparagus in the microwave (put in a bowl with 2 table spoons of water) for 3 mins, mix 1 teaspoon of English mustard with 3-4 tablespoons of greek 0% yoghurt and all done!

Cutting off the fat on the steak makes this quite a healthy option and red meat is an important source of iron, especially for us runners who are often iron deficient.
